Mozzarella in Carrozza

  • 8 slices of sandwich loaf
  • 8 slices Boriati’s scamorza
  • 3 eggs
  • 100 grams of flour
  • 150 grams of breadcrumbs
  • 120 grams of spinach
  • Peanut oil for frying
  • Salt
With the help of a round stencil cut the sliced bread and the Boriati’s scamorza. Form 4 sandwiches and put the scamorza in in the middle. Then pass them in flour, then in the beaten egg and finally in breadcrumbs. Fry in hot oil until it’s golden brown and serve on leaves of spinach.
